Near East Wild Mushroom and Herb Couscous
Forget rice, I should be eating more couscous. Those little al dente grains are breezy and flavourful, and yet the best I've ever offered them is shoved-aside shelf space ever 2-5 years and consumption only after procrastination and not being in the mood for a Whataburger taquito at 3 a.m. They deserve better.

Of course, I should make my own couscous (how hard can it be?) and not succumb to little "spice bags" to be poured in after 1.25 cups of water and 1T of butter or margarine have come to a boil. Did you know that they say cellulite comes from eating all of this overly-preserved sodium-rich stuff? And you know I never say bad things about salt.

Having recently visited the local HEB in a fit of frugality while desperate for something "filling but light," I actually bought three boxes of couscous - curry, toasted pine nut, and this mushroom and herb. The M&H was nice, present but not too presuming. Check it out.
